A Cajun rice dish.
- 200ml Rice
- 400ml Vegetable Stock
- 1 White Onion
- 1 Red Pepper
- 1 Green Pepper
- Tinned Kidney Beans, drained
- Cajun Spice Mix
Dice the onion and peppers and saute in a pan until soft.
Add the kidney beans and the spices and cook for a moment.
Add the stock and bring to the boil.
Add the rice and stir so it is under the water.
Cover and simmer on low until stock is absorbed.
Remove from heat and let sit, covered, for 10 minutes.
